Der Cabernet verbringt häufig 15–18 Monate und seltener bis zu 30 Monate im neuen oder gebrauchten Eichenfass (oder Barrique) aus Frankreich, Slowenien oder Amerika. Diese Lagerung verleiht, wenn sorgfältig ausgeführt, dem Wein Röst- oder Vanillearomen und mildert die Strenge der Tannine. Durch diesen Ausbau kann der Winzer speziell den Cabernet stark beeinflussen, die Tannine betonen oder ihm einen Eichengeschmack geben.
