(Bordeaux blanc; 100% Sauvignon Blanc; pH 3.14; 14% alcohol; tasted at Château Margaux with Philippe Bascaules). Picked between the 18th and 28th of August during the final days of the heatwave episode. Rich for Pavillon blanc, but essentially mineral and fresh. The low pH is crucial here. I find this very true to its identity despite the unique conditions of the vintage. Gooseberry, rose water, a more solar mirabelle note, sandalwood, white pear and a little honey and saffron, with a hint of spice and vanilla pod, even a more tropical note of passionflower and passionfruit. I find this captivating and incredibly beautiful. There's a wonderful salinity on the finish, with iodine, oystershell and whetsone notes combined.

In the heat of 2025, Pavillon Blanc takes an unexpected path, turning away from opulence toward something far more thought-provoking. The ripe fruit is clearly defined, with notes of propolis, banana pear, and honeysuckle spreading quickly across the senses in a wave of sweetness. Just as the wine seems poised to turn more opulent, a touch of reductive character quietly introduces dimension, shaping a more three-dimensional profile. Each time the palate begins to soften, a gentle bitterness of grapefruit peel lifts it back up, allowing this dry, hot vintage white to maintain a rare sense of balance. It makes for a remarkably engaging tasting experience.

The 2025 Pavillon Blanc du Château Margaux sails out of the glass with notes of honey-drizzled white peaches, juicy pears, and passion fruit, plus nuances of beeswax and elderflower with a waft of allspice. The medium- to full-bodied palate delivers a wonderfully crisp backbone with a satiny texture and intense orchard and tropical fruit layers, finishing long and spicy. This is 100% Sauvignon Blanc. It has a pH of 3.14, and the alcohol is 14%. The yield was 16 hl/ha.

This is long and rich, beautifully drawn out, with hints of bitter almonds, preserved lemon, elderflower, steel, gunsmoke. Clear concentration, with the same intensity of flavour as you get in the red wines of Margaux this vintage, structured with plentiful phenolics despite lower less stirring than usual. Smallest number of bottles ever produced because low 16hl/ha yield and 45% of the crop, so just 7,000 bottles. Hold +3 years ideally, and carafe. Harvest August 18-22, picked in between two heat spikes.
