Fondue
The word "fondue" means "melted". It originally referred to a dish made from melted cheese. Nowadays, the term "fondue" is used to describe any dish in which bite-sized pieces of food are dipped into a warm liquid. Cheese fondue, fat fondue and broth fondue are popular. If you want something a little more unusual, you can also make a wine fondue and cook your food in boiling wine.

Goose
The best known in our region is probably the Martinigans, which is eaten on 11 November, St Martin's Day. However, these wines are sure to go well with all geese prepared in a similar way.

Spinach dumplings, for example, offer a simple alternative to Christmas classics. Served elegantly with cream sauce and cherry tomatoes, they are a real eye-catcher.
2019 Grüner Veltliner Single Vineyard by Sohm & Kracher
This wine comes from vines that are over 65 years old and is aged for 5 years in large 1,000-litre wooden barrels on fine lees.
The nose reveals stone fruit and herbs, which become more intense the longer it is left in the glass. This means that the wine needs air to fully develop. On the palate, yellow fruits and a subtle saltiness and herbal spice on the finish, with a long aftertaste.

Lentil roast
If you prefer something a little more unusual, serve a lentil roast on festive days. Different types of lentils add texture, flavour and protein. This spicy dish needs a wine that can hold its own.
2022 Pinot Gris Reserve by Weinlaubenhof Kracher
The intense, dark yellow Pinot Gris Reserve displays a deep, elegant and complex bouquet of ripe stone fruits such as pears and apples, mixed with salty, yeasty and nutty notes. Made from vines that are over 60 years old and aged for 20 months, it is full-bodied, lush and intense, but also refined, fresh, mineral and dry. The wine shows perfect fruit ripeness at harvest and a deep, elegant finish that is aromatic, fresh and stimulating."

2022 TBA No. 3 Grande Cuvee by Weinlaubenhof Kracher
"Chardonnay and Welschriesling complement each other perfectly in this cuvée. Chardonnay brings citrus aromas, light milk caramel and dried fruit. Welschriesling is elegant with quince, apricot, apple and pear on the palate. Very fresh finish and candied ginger in the aftertaste. A perfect symbiosis of our two main varieties."
