Puttonyos – what is it?
Products often feature a number followed by the designation “putt.” This has something to do with how the wine is made. Aszú wine is produced in two stages: the grapes affected by the noble rot Botrytis Cinerea are ground into a paste. The healthy grapes are fermented into a dry wine. This forms the basis. The sweet paste is added to the dry wine and then fermented further.
The unit “puttonyos,” meaning “tub,” is used to add the paste. One tub corresponds to approximately 25 kilograms. The number always indicates how many tubs of Aszú paste are added to a 136-liter barrel of dry wine. The designation “6 putt.” therefore corresponds to a mixing ratio of approximately 1:1.
