(Saint-Émilion; 76% Merlot; 24% Cabernet Franc; a final yield of 40hl/ha; pH 3.5; 14% alcohol; tasted three times, the third at the property with Nicolas Audebert). Radiant in its lift and purity, this is very accessible, very expressive and beguilingly beautiful aromatically, with the cool composure of the sombre crypt of the grand cathedral. The most floral of Chanel line-up - pure peony with a little mimosa and even a hint of lily of the valley. Patchouli, a suggestion of incense. The fruit is a little redder-tinged than often is the case here (though actually less so when retasted at Canon), but the blueberry notes are much more present in the mouth and they come as an additional delight. This is another hauntingly beautiful wine. Texturally sublime, much like Rauzan-Segla on the 'other side'. Supremely classy but never blowsy or demonstrative. Ethereal is the word. The culmination to date of the project constructed over the last decade here.

The grace Château Canon shows in the 2025 vintage brings to mind the Suzhou Classical Gardens. It does not seek the grandeur of the Forbidden City, nor the opulence of the Palace of Versailles. Instead, through its turns, corridors and spaces of restraint, it reveals its beauty little by little, expressing a deeply refined sense of stillness. Supple and luminous, like flowing agate, it carries a softness that never seeks attention; fine and persistent, the saline note lingers gently, speaking softly and drawing out a restrained elegance. At the first taste, I am nearly at a loss for words. Even in such a dry vintage, it still preserves a purity and tenderness untouched by the outside world. It feels like a place of return, where one gradually finds calm amid complexity, and cannot help but look back once more.

Deep garnet-purple in color, the 2025 Canon shimmies out with seductive notes of fresh blueberries, mulberries, and black raspberries, leading to an underlying perfume of violets, licorice, Sichuan pepper, and mossy tree bark with a touch of lavender. The medium- to full-bodied palate is intense with stacked black, blue, and red fruit layers, supported by a high level of very finely grained tannins and a crisp yet nicely knit line of acidity, finishing very long and minerally. A real “wow” wine! The blend is 76% Merlot and 24% Cabernet Franc. The alcohol is 14% with a pH of 3.5. It will age 16–18 months in French oak, 49% new, with 7% foudres. Tasted twice.

An impressive Canon, seductive limestone character that showcases what was possible in the vintage. Slate, chalk and pumice stone, all wrapped up in bright and vivid iris flowers, push and pull momentum through the palate where things stop, take a breath, then kick off again with a new layer of nuanced understated toasted spice and cool blue fruits. Deft, skilful, rooted in place. 40hl/h yield. Tasted twice. Nicolas Audebert director. Thomas Duclos consultant. 3.5ph.
