Such an incredible nose, nutty with caramel, toffee, some Sherry-like aromas - macadamia, candied orange and mixed peel. Incredible complexity on the palate, you get all these aromas of spice and age, the wood elements, the brandy snap and caramelised lemons. Still so brimming with life though, the underneath is lively - the coursing of bright lemon acidity keeping it lifted while the aromatics play out above, going from sharp to bitter to tertiary to fresh and youthful. The texture is still sharp as a knife, fine bubbles are so persistent and you just have so many layers appearing. The structure is still there, supporting all the flavours and nuances that are going on and yet with a bright sweet lemon juice aspect on the finish it suggests this has plenty more life ahead yet. You just want to keep all the flavours in your mouth, savouring each element. Divine. (Decanter)
